Swedish Pecan Cookies

Ingredients (please include quantities/weights)

  • 1/2 Pound Unsalted Butter (2 sticks) Softened to Room Temperature
  • 1 Cup Powdered Sugar Plus More for Dusting
  • 1 Cup Chopped Pecans
  • 1 Teaspoon Vanilla Extract
  • 1 3/4 Cup All Purpose Flour

Instructions/Steps

Cream together the butter and powdered sugar. Add the vanilla and the chopped nuts until combined. Gradually add the flour until just combined. Scrape the bottom of the bowl to ensure it is thoroughly mixed.

Empty bowl onto a clean work surface. Work the dough into two logs that are each 1.5 to 2 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 2 hours.

When the dough is sufficiently chilled and firm, preheat the oven to 350 degrees Fahrenheit. Remove the plastic wrap and cut the logs into cookies, each no more than 1/4 inch thick. Place on a cookie sheet lined with parchment paper or a silicon baking mat. Bake for 12 minutes, or until the bottom edges turn a slight golden color.

Allow the cookies to cool completely, either on the cookie sheet, or remove them to a cooling rack after 5 minutes on the sheet. When the cookies are cooled completely, roll them in powdered sugar and brush off any excess.
