Ingredients (please include quantities/weights)
- 1 Cup fresh sliced strawberries
- 1 Box white cake mix
- 3 Large eggs
- 3/4 Cup vegetable oil
- 1 3oz. box of strawberry gelatin
- Strawberry Buttercream Frosting:
- 1 Cup fresh sliced strawberries
- 1 Cup softened butter
- 3 - 4 Cups powdered sugar
- 1/2 tablespoon vanilla extract
Instructions/Steps
- Pre-heat your oven to 350 degrees and grease a 9x13 baking pan with butter.
- In a large mixing bowl, mix together the cake mix, eggs, oil, 1 cup of strawberries and strawberry gelatin.
- Add the batter mix into the baking pan, bake for 30 minutes and allow to cool.
- Mix frosting while cake is cooling; start by whipping butter in a large bowl using a hand held mixer.
- Mash 1/3 cup of the sliced strawberries and mix into whipped butter, with the 1/2 tablespoon of vanilla extract.
- Mix powered sugar, one cup at a time, until the consistency is appropriate for spreading.
- Frost the cooled cake and place 9 (or so) sliced strawberry halves onto the cake.
Preparation Tips / Special Notes
This is great chilled, when serving during summer.
