Strawberry Jello Cake

Ingredients (please include quantities/weights)

  • 1 Cup fresh sliced strawberries
  • 1 Box white cake mix
  • 3 Large eggs
  • 3/4 Cup vegetable oil
  • 1 3oz. box of strawberry gelatin
  • Strawberry Buttercream Frosting:
  • 1 Cup fresh sliced strawberries
  • 1 Cup softened butter
  • 3 - 4 Cups powdered sugar
  • 1/2 tablespoon vanilla extract

Instructions/Steps

  1. Pre-heat your oven to 350 degrees and grease a 9x13 baking pan with butter.
  2. In a large mixing bowl, mix together the cake mix, eggs, oil, 1 cup of strawberries and strawberry gelatin.
  3. Add the batter mix into the baking pan, bake for 30 minutes and allow to cool.
  4. Mix frosting while cake is cooling; start by whipping butter in a large bowl using a hand held mixer.
  5. Mash 1/3 cup of the sliced strawberries and mix into whipped butter, with the 1/2 tablespoon of vanilla extract.
  6. Mix powered sugar, one cup at a time, until the consistency is appropriate for spreading.
  7. Frost the cooled cake and place 9 (or so) sliced strawberry halves onto the cake.

Preparation Tips / Special Notes

This is great chilled, when serving during summer.
