Grandma Schmidt's Peanut Butter Cake

Ingredients (please include quantities/weights)

  • 2 c. flour
  • 2 c. sugar
  • 1 tsp.soda
  • ½ tsp. salt
  • ½ c. oil
  • 1 ½ sticks of margarine
  • 1/2 c. creamy peanut butter
  • 1 c. water
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • ½ c. buttermilk
Icing:
  • ½ c. evaporated milk
  • 1 c. sugar
  • 1 T. margarine
  • 1 c. peanut butter
  • 1 tsp. vanilla

Instructions/Steps

  • Mix flour, sugar, soda, & salt.
  • Set aside. Mix oil, margarine, peanut butter, & water together.
  • Bring to a boil & pour over dry ingredients.
  • Add eggs, vanilla & butter milk.
  • Pour into greased 1 X 11 X 15 inch metal pan (approx.).
  • Bake @ 350 X 20-25 min.
  • For the icing, bring to boil: milk, sugar, margarine.
  • Cook X 2 min.
  • Add peanut butter & vanilla.
  • Pour over the cake.

This recipe originated from the Mennonite community around Newton, Kansas. It is my favorite recipe from my grandma, Elfrieda Schmidt.
