Ingredients (please include quantities/weights)

  • 3 - English or garden cucumbers - remove seeds if desired
  • 1/4 - onion, diced
  • 1 can Rotel tomatoes - mild or hot depending on preference
  • 1 pkg - dry Ranch dressing
  • 1/8 cup - vinegar
  • 1/8 tsp - sugar
  • salt & pepper to taste

Instructions/Steps

  • Finely chop cucumbers and onion (can grate if preferred) to desired size. Add the remaining ingredients.
  • Serve with tortilla or pita chips.

Preparation Tips / Special Notes

  • Let set for at least an hour before serving, best when let sit overnight.
  • Prep time varies depending on how long it takes to chop all cucumbers and onions.
  • This makes a large batch.
