Ingredients (please include quantities/weights)
- 3 - English or garden cucumbers - remove seeds if desired
- 1/4 - onion, diced
- 1 can Rotel tomatoes - mild or hot depending on preference
- 1 pkg - dry Ranch dressing
- 1/8 cup - vinegar
- 1/8 tsp - sugar
- salt & pepper to taste
Instructions/Steps
- Finely chop cucumbers and onion (can grate if preferred) to desired size. Add the remaining ingredients.
- Serve with tortilla or pita chips.
Preparation Tips / Special Notes
- Let set for at least an hour before serving, best when let sit overnight.
- Prep time varies depending on how long it takes to chop all cucumbers and onions.
- This makes a large batch.
