Chocolate Chip Cookies

Ingredients (please include quantities/weights)

  • 125g butter at room temperature
  • 200g light brown sugar
  • 1 egg beaten
  • 220g plain flour
  • 3/4 teaspoon baking powder
  • 200g chocolate chips

Instructions/Steps

  1. Preheat the oven to 180C/350F/Gas 4. Put the soft butter and sugar into the mixing bowl and beat until the mixture looks creamy, smooth and fluffy. Scrape down the sides of the bowl from time to time so everything gets thoroughly beaten.
  2. Add the egg to the mixing bowl and beat very well, scraping down the sides of the bowl every now and then. Sift the flour and baking powder into the bowl and mix in. Add the chocolate chips and mix until evenly distributed.
  3. Dip your hands in cold water and shake off the drops, then shape the dough into pinpong-sized balls. Set the balls, spaced well apart on the lined baking sheets.
  4. Place in the heated oven and bake for 12 to 13 minutes until slightly golden brown round the edges. Leave to cool completely before removing the cookies from the sheet. These can be stored in an airtight container and eaten within 5 days.



    Makes 18 gooey cookies.

Preparation Tips / Special Notes

I usually make a double batch of these for the Engineering team at Prestwick on a fairly regular basis. Although they do keep for 5 days these are normally gone within 10 minutes of putting them out to share!

Unfortunately I've not been able to share any since the start of March, but look forward to being able to share again when we're all back in the office.

No pictures though as it's been a while since I've made them for the team.
